Brescia Wines and Local Cuisine: A Culinary Study Initiative

Promotion of local and national products: this is the motto that prompted Danilo and Gabriella, from the Trattoria Fior di Roccia del Porto di Dusano in Manerba del Garda, to propose a series of themed “study-meetings.”

And it won’t only be the typical products of Lake Garda that take center stage in this unique yet intriguing culinary initiative, which will mainly feature DOC wines from the Brescia Riviera of Lake Garda.

Objectives and partners of the initiative

Of course, this will not be a comparison of one type versus another, but simply a means of understanding and approaching those products, more or less famous in national cuisine, but also in local traditional cuisine.

This initiative has received praise and support even from public entities, such as the Agriculture and Tourism Departments of the Province of Brescia, through the same assessors, Mantelli and Buffoli.

First appointments and gastronomic proposals

The event begins on Saturday, September 30th, at 9:00 p.m., with “the pig festival.”

The first protagonist of Brescia’s traditional cuisine, and that of neighboring provinces, long appreciated for its meats and especially because, as the saying used to go—and still does—“you don’t throw anything away,” will be the pig.

And so, the evening will start with an aperitif of ciccioli, or grépole, followed by mixed cold cuts with pickled vegetables, then risotto with luganega sausage or “pontél.”

Then a grand celebration for every taste with sausages, grilled ribs, cotechino, coppa, etc., etc. The wines accompanying the various dishes will be produced in Valtenesi by the Masserino agricultural company.

The only flaw of the evening will be the limited space, which will not allow everyone to participate and taste these dishes.

Next Saturday, October 8th, at lunch, it will be the turn of white and black truffles.
