Hospitality Students Compete at Expo Riva Hotel and Expo Food

Expo Riva hotel, and even more Expo Food, represent the ideal setting for the competition among young talents (in some cases already confirmed) nurtured by ten of the best hospitality schools in Europe, trainees specialized in two sections: cuisine and restaurant-bar.

The Italian schools of Tesero, Gardone, Cicciano, Brescia, Desenzano, and Riva, joined by the Austrian Zell, Danish Viborg, Polish Poznan, and German Darstadt, compete with a menu that, coincidentally, excludes beef.

Details of the Competition

The theme assigned to the teams involves an appetizer with ham and speck, a risotto as a first course, a pork fillet for the second, and finally a dessert of free choice.

Two teams per day will compete in preparing ninety covers, destined for guests who are periodically reserved for the competition sponsors and judged by a professional jury.

In this regard, the innovation this year consists of two tables, which will have a total of 40 points (out of 200 overall) reserved for “normal” guests: to judge the taste of a dish, it is said, you do not need to be a culinary expert.

The restaurant and bar teams will be engaged in preparing a table with flowers and decorations, fruit carving, lamp work, and cocktail preparation.

Also, in this case, the judges who will assign the relevant scores are representatives of the industry associations.

Ten teams, five days: the competition, which is invitation-only, spans the entire duration of the fair, from Sunday, January 28, to February 1.
