Vento & Vela Launches New Dolce Inspired by Salodini’s Poetry

A new “Dolce del Garda” inspired by a poem has been presented in recent months: “Vento & Vela,” created by pastry chef Chiara Bertazzi. The concept traces back to a 2004 lyric by Marisa Salodini (1940–2020), while the trademark was filed by Dino Leali, who—together with Bertazzi—selected the name, shape and recipe to turn the text into a commercial product.

The cake was developed in collaboration with the pastry lab of Maccabiani Oreste della “Rosa” in Bedizzole. It is described as a soft, soaked dough with a lemon profile (juice, distillates and zest), available in three formats (400 g, 600 g and single-serve) and produced year-round. The poem is printed in the brochure accompanying each piece, and sales are currently active at the Padenghe shop; the product launch and trademark filing took place in recent months.
