Typical Mountain Products and Dishes
Chestnuts and mushrooms, but also cheeses, honey, and oil, leading up to wine, organic apples, and shortcrust pastries: all main features of the Spiazzi trade fair. A comprehensive promotion of mountain products and the entire Caprinese area, considered the primary actors of a continuously revisited traditional cuisine.
Showcasing a wide range of visually striking dishes with notable gastronomic appeal: from porcini mushroom soup to chestnut minestrone; from egg omelette salad to baked chiodini or porcini mushroom casserole; from corn and mushroom tart to beef stew on a bed of porcini, and mushroom cappellacci with walnuts and cheese.
This includes treats like the Rosa del Baldo cake, pear and chocolate cake, and chestnut shortbread. Seasonal delicacies offered by the lower and upper Caprinese catering services for this autumn, which suddenly proved abundant, especially in the field of mycelia.

A direct testament to the over 240 types of mushrooms exhibited in the display organized by the Gruppo micologico e protezione flora spontanea of the Dopolavoro ferroviario di Verona. Truly a treasure for specialists, particularly for the group’s president, Silvano Ferrari, and also Bepi Filippini, head of the flora spontanea section.
To find oneself amidst such divine grace after the sparse September displays, which featured very few mushroom specimens due to the drought summer. An occasion like no other to set up a comparison table between mushrooms similar in structure and color but starkly contrasting in edibility and toxicity.

However, chestnuts dominated the scene — those from the eastern slopes of Baldo, regarded by the trade fair coordinator Fernando Brunelli as “sweeter and tastier even if less noble than the marrons from other areas.” Especially radiant was Loretta Zaninelli, president of the Pro loco, pleased with the “remarkable influx of visitors” attracted and favored by splendid sunny days.
Likewise, Caprino’s mayor, Maria Teresa Girardi, present at the inauguration of the two-day event dedicated to mountain products, accompanied by counselor Giuseppe Campagnari, the president of Asco-Unione Fernando Morando, and Luigi Castelletti of the Comunità del Baldo; representatives from the promoting entities, together with tourism operators from Spiazzi and the Riviera degli Olivi Tourist Promotion Company, celebrating a very successful fourth edition of the mountain products trade fair.
