Dai Bagaj Debuts in Trobiolo as Roè Volciano’s Seasonal-Quality Restaurant
Dai Bagaj, the contemporary osteria that evolved from the historic La Vigna, opened in March 2022 in Trobiolo, a hamlet of Roè Volciano on the hills above Salò toward Valsabbia. It is run as a family operation by brothers Cristian and Mirko Fugagnoli, with Cristian in the kitchen and Mirko in charge of the dining room. The name—bagaj meaning “kids”—reflects the family-led management.
Since its opening, the project has evolved into a gastronomic offering guided by quality, seasonality and respect for ingredients, with a concise and frequently updated dinner menu off the carta. A recent tasting dinner included antipasti such as seared scallops with chickpea cream, primi like risoni al pomodoro with stracciatella and seppie scottate, and a fish course of baccalà mantecato with seppioline and potatoes al nero, plus seasonal desserts such as tarte tatin; the kitchen works with small producers and daily catch. The restaurant is open year-round.
