Valeggio sul Mincio Unveils New Tortello al Custoza at Valeggio Contemporanea

The new tortello al Custoza, paired with the traditional tortellino Nodo d’amore, headlines Valeggio Gusto within Valeggio Contemporanea, with the official presentation set for Saturday, June 6 (evening dinner) and Sunday, June 7 (tastings) in Valeggio sul Mincio (VR). The initiative centers on a dish that blends local products and wine, featuring tastings in Piazza Garibaldi and menu insertions in local restaurants.

The dish was created by Consorzio Custoza Doc in collaboration with Associazione Ristoratori di Valeggio sul Mincio and Associazione Pastifici Artigiani di Valeggio. It comprises an egg pasta sheet with a creamy filling of Verona celery, Monte Veronese Dop cheese, and Custoza Doc wine, finished with melted butter and offered in variants such as celery macerated with wine or salted zabaglione. The tortello will be served at the gala dinner of the Ristoratori on June 6, and in street-food format during tastings promoted by the Pastifici Association on Saturday and Sunday from 10:30 in Piazza Garibaldi; the event is organized by Associazione Percorsi APS Valeggio sul Mincio with the Comune di Valeggio sul Mincio.
