Cavaion Conference Explores Soppressa, Asparagus, and Traditional Food Culture

In 1997, the Comune di Cavaion organized an interesting and unusual conference titled “Metamorphosis of the Pig,” aimed at recalling traditional figures and moments related to pig farming and butchering. The event also initiated a discussion on the characteristics of proper farming practices to promote the quality of pork products.

This discussion continues now with a conference on spargola (spalted or pressed pork) and asparagus, which will be held next Saturday morning, from 9 am to 12 pm, in the civic hall “Corte Torcolo.” Esteemed speakers will participate in this event: psychiatrists Luciano Bonuzzi, Gabriella Ba, Giovanni D’Agostini, Giacomo Di Marco, and Flavio Nosè; dietitian Ottavio Bosello; professor Roberta Piccoli; geographer Eugenio Turri; nutrition expert Giuliano Dallolio; agronomist Lino Baccianella; zoologist Casimiro Tarocco; historian Gian Paolo Marchi; and gastronomic chef Giorgio Gioco.

“This conference aims to address aspects related to a prestigious cured meat derived from pork, which is the soppressa,” explains the mayor, Giancarlo Sabaini.

“But it also seeks to discuss asparagus, a particular and traditional product, to which Cavaion has dedicated a spring festival for years. The festival is held, as is now customary, on the second Sunday of May.” In the first part of the meeting, the production of Veronese soppressa, its compositional characteristics, nutritional aspects, and its place in Veronese cultural tradition will be examined.

The second part will focus on asparagus in the Mediterranean diet, its cultivation through the centuries, and asparagus in Proustian dietetics. Finally, a culinary journey featuring asparagus and soppressa and a convivial dialogue will conclude the conference. The event aims to blend culture, medicine, tradition, economy, and gastronomy in the promotion of typical, ever-improving food products.
