Omero: Lake Pike in Cream Celebrated as a Millennium Gastronomic Highlight
For the new millennium and the Year 2000 Jubilee, a new dish is to be tasted, by the lake, in the most important location for lacustrine cuisine and gastronomy, namely Lazise and its surroundings.
It is pike in cream with potato wafers, perhaps served on a shell bed of colorful vegetables. It was almost created as a joke from a brilliant idea by a high-ranking chef who has been working for years in a well-known restaurant overlooking the old harbor of Lazise, facing the historic Venetian customs house.
Its name is Omero, like the mythical Greek poet, with a very Veronese and local surname: Rossignoli. The dish of the millennium was first presented abroad, precisely in Rosenheim, during the celebration of the twentieth anniversary of the twinning, in the large halls of the Bavarian municipal house.
The presentation of the dish and the international recognition
“On that occasion,” says Giulio Azzi from the Lazise hotel association, “it was Omero himself who structured the entire menu for the German friends. The main dish was pike, which is also the most important fish caught, with no small difficulty, in our lake.”
Faced with that unexpected success, the restaurant association decided to honor this culinary creation, born from the lake’s enogastronomic tradition, by celebrating it as a ‘jubilar!’
Characteristics of the dish and wine pairings
It is a simple dish, carefully prepared in every detail, digestible and fragrant, which encapsulates the best flavors of the lake and land. The presence of potatoes is crucial, as it energizes the flavor profile.
White or rosé wines, fresh and fragrant, aromatic and sparkling, complement Omero’s creation very well. Leading the pairings are Bardolino Chiaretto and a delicately textured Lugana, both ideal for savoring this delicacy.
